All you need is:

  • 6 eggs
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 1 tbsp. minced garlic
  • 2 cups of spinach
  • 2 cups of mushrooms
  • Extra virgin olive oil

First, pre-heat your oven to 350° C. You can begin preparing your food by cracking 4 eggs into a bowl, and then adding only the egg whites of the remaining two eggs. Mix and set aside. Next, it’s time to wash and dice all your vegetables. In a pan, heat the extra virgin olive oil and add the chopped peppers and onion. Soften your vegetables for roughly five minutes and then add your mushrooms and spinach. After about two minutes, add your minced garlic, and stir for 30 seconds. Add your softened vegetables with the eggs and stir.

Using a measuring cup to pour, disperse evenly into a greased muffin tin. Bake for 15 minutes and then allow to cool for five to ten minutes.[ii] You can serve right away or store them inside the fridge for up to a week. Bon appetite!
